These tasty little things are a great way to start your day and don't take too long to make either.

Ingredients

Instructions

  1. Preheat oven to 400° F.
  2. Mix eggs, salt, pepper, and paprika in a bowl until thoroughly combined.
  3. Cook onions in butter on medium-low in a skillet until translucent.
  4. Add the egg mixture to the skillet with the onion and scramble the eggs.
  5. Spray the muffin tin with Avacado oil or rub with butter to prevent sticking and line with ham slices.
  6. Fill the ham slices with the scrambled eggs.
  7. Top with tomato and cheese.
  8. Bake until the cheese starts to melt (varies depending on the type of cheese used).
  9. Broil for 1-2 minutes until cheese starts to bubble.
  10. Slice some chives to top the scrambled egg & ham cups.
  11. Enjoy!
